Before we left Virginia, it was sweater-weather. When we arrived in Texas, it was like being transported right back into summer, mosquitoes and all. Now that we are nearing the end of October, it still feels very much like summer to me.
This past weekend we took a quick trip to Houston to visit family friends. We managed to squeeze in a quick visit to Trader Joe’s (yay!) where I picked up some sweet pumpkins to bake. You know, to try to get into the fall mood.
I have about 10 cups of pumpkin in the freezer, waiting for the cooler weather and for the holiday baking season to begin. The seeds needed to be roasted too, of course. I used this method, except roasting took way longer with lots of stirring.
This year we are not planning on doing any traveling for the holidays, and I don’t think we will have any visitors over either. Still, I am excited to do a little comfort cooking for us, food coma and all. Oh, and helping to direct Brian to put up the Christmas lights!
