Although I generally try to be good about meal planning, sometimes life gets in the way and I’m left trying to figure out what to make for dinner. Sometimes I’m tempted by the idea of just going out, or having my husband pick up some take-out or pizza on the way home from work. But in the end, cost and convenience wins when we stay home at eat.
That being said, I try to have a few “emergency” meals ready to go. I love the idea of freezer cooking, and I do that sometimes, but for the most part, I keep our fridge and pantry stocked so that I could make a meal within 30 minutes or less.
I have a few “go-to” meals and they are:
- pasta + sauce + meat
- macaroni and cheese and bacon or ground meat
- ravioli and alfredo sauce and spinach and bacon or ground meat
- noodles and chicken broth and meat
- meat + vegetable + rice
- I keep sauces like barbecue or a General Tso’s sauce in the pantry/fridge
- eggs + bacon + bread
Most of the time, I use my oven to bake a meat, which gives me time to cook the rice in the rice cooker and stir-fry or cook a vegetable onto the stove. The pasta is even easier.
Our pantry is well stocked and I make sure to keep certain foods stocked at all times to make life easier.
At our house we eat a lot of leftovers. My husband’s lunches are leftovers from a previous night. It saves time for me than constantly being at the kitchen and coming up with new meal ideas.
