I’ve had a lot of fun experimenting and making my own bread this year. Still, I keep picking up a variety of bread-making books to learn more skills and techniques in hopes to improve the bread I make for my friends and family. Once you start having homemade bread regularly, it’s hard to go back to the store-bought versions!
In The Bread Baker’s Apprentice: Mastering the Art of Extraordinary Bread, Peter Reinhart guides you step-by-step on mastering the art of bread-making. This book is an essential resource for anyone interested in bread. Reinhart deconstructs the bread, by troubleshooting and going through the process.
The rest of the book covers about 200 pages worth of recipes, or what he calls formulas. I liked that it’s organized to include weights in ounces and grams as well as measures. There’s so much good commentary and notes that even if you might not follow his formula, you might be able to apply some tips or techniques to your own recipes.
