Since buying an Instant Pot last year (I have this one), I have been consistently using it at least 3 times a week. It’s been wonderful to learn to use the machine, especially for busy days of running back and forth between 3 kids. Sometimes I have to look up recipes, other times I have adapted my own.
Most recently, The Essential Instant Pot Cookbook: Fresh and Foolproof Recipes for Your Electric Pressure Cooker, has come into my collection and I am happy with an Instant Pot approved book that includes a variety of foods. This is a great introduction cookbook if you are new to using the Instant Pot.
I’ve made the Jambalaya, Irish Beef and Root Vegetable Stew, and One-Pot Roast Dinner. I don’t think any of the recipes are groundbreaking or something that you cannot easily find on your own, but it’s nice that it’s all contained in one place to easily access.
